Another yummy piece, Pat! Now I really must make carrot cake. And what a brilliant fix to rebake the “ooze” into edible little tart-cakes the next day. I would have just thrown the mess away!

You've made me aspire to make something that oozes like lava across the counter… I feel like something like that happened to me once but who can remember what it was. As much as I love chocolate, carrot cake is my absolute favorite! I have to eliminate fiber from my diet and learned that a carrot raw is a no no, but a carrot cooked is OK as there is less fiber in that form. So. Much. To know! Thanks, Pat. You always take me to a warm fuzzy place when I read your posts. 💋

Big carrot fan here. I usually have a few sliced in 3 inch long sticks in the fridge to nibble on with a sandwich or soup. Lately I have been enjoying them in a creamy carrot ginger soup that is pureed in the blender just before serving. Sometimes I throw a parsnip in, too. Really very good! Looking forward to your carrot cake episodes.
