That's what my mom said, too. But I think Mabel's turkey platter technique really helps to stabilize the whites because you're equalizing the amount of air you're pumping air into them. And, believe me, once you get over the shock of the whole turkey plate direction, it turns out to be very easy and sort of fun. Just be sure to choose a rimmed plate.
